Mushroom & Chicken Soup The mushrooms give the creamy texture and flavour to the chicken soup. 

Serves 4-5 

Mushroom & Chicken Soup ingredients 
51/2 cups chicken stock or 51/2 cups of water mixed with 1 chicken seasoning 
cube 
1 cup milk 
1/4 cup boiled and shredded chicken 
75 gm mushrooms - roughly chopped 
11/2 tbsp butter 
11/2 tbsp plain flour (maida) 
salt and pepper to taste 
GARNISH 
1 tbsp chopped parsley or coriander 
2 tbsp fresh cream

Mushroom & Chicken Soup cooking method

1. Mix the chicken stock and milk and keep aside. 
2. Heat butter in a pan. 
3. Add mushrooms and fry for 4-5 minutes on low heat till soft. 
4. Sprinkle the flour over the mushrooms and stir on low heat for 1/2 minute. 
5. Add stock and milk mixture. Bring to a boil, stirring continuously till thick. 
6. Add boiled and shredded chicken, salt and pepper. Cook for a minute. 
7. Serve hot, garnished with fresh cream and parsley.
